The preparation is simple and the result memorable. Just cook the peas in boiling water, purée them as mashed potatoes, serve them with a touch of Extra Virgin Olive Oil, some fresh lemon drops, rings of fresh red onion and finely chopped scallions. This unique “meze” is a crowd-pleasing attraction.
